The Moore's Family Secret Sausage Roll Recipe

Ingredients

  • Frozen puff pastry, or flaky pastry
  • Good quality pork sausage meat (or veggie sausage meat!)
  • Sage and Onion Stuffing
  • 1 egg

Directions

Hydrate stuffing according to packet instructions. Mix with Sausage/ veggie meat in a bowl and season to taste (I use salt, pepper, paprika, red pepper flakes and Worcheshire sauce). Flour your board and roll out the pastry. Place long sausage on pastry, wrap pastry over and use egg wash to stick pastry together. Use fork to score edge and egg wash top . Cut to size and cook at recommended temperature on pastry packet.

Spinach Soufflé

Ingridients

2 (10-oz.) packages of chopped frozen spinach
1 cup of mayonnaise
1 can cream of mushroom soup
2 eggs
6 oz. shredded cheddar cheese (I always use more, use your own judgement!)

Directions

Preheat oven to 375 degrees. Microwave the spinach and drain well. In a large bowl, combine the spinach with the mayonnaise, soup, eggs, and 4 oz. of cheese. Pour into a buttered casserole dish and top with the remaining 2 oz. of cheese. Bake for approximately 30 minutes. Serves 6.

Greens and Beans

Being a native Upstate New Yorker from the Syracuse area, this was a staple on the menus in many restaurants. It’s the ultimate New York State comfort food, and it’s way healthier than a garbage plate!

Ingredients

2 tablespoons olive oil
1 chopped onion
2 cloves garlic, minced
1/4 teaspoon red pepper flakes
Salt and freshly ground black pepper
2 cups kale, washed, stems trimmed and chopped. (You can also use escarole, Swiss chard, or any tough-leaved greens. Spinach doesn’t work very well, as it breaks down in the heat.)
1 (15- ounce) can cannellini beans, drained
3/4 cup chicken stock

Directions

  1. Heat olive oil over medium heat in a large pot.
  2. Add onion and garlic. Sauté until tender about 3 minutes.
  3. Add the red pepper flakes and salt and pepper; stir until fragrant.
  4. Add the kale and sauté until it cooks down slightly.
  5. Add the beans and the chicken stock.
  6. Cover and let cook for 10 minutes. Season to taste with salt and pepper.
